Wildling

There's no better way to experience Ontario terroir than through fruit growing in the wild. Wildling is made from 100% wild apples.
Late in the summer of 2022, we found a grove of wild apple trees behind a friend's property in Caledon. We picked 1800lbs of fruit and hauled it over hills and through tall meadows to get it into our truck and back to the cidery.
After pressing the fruit we let the juice spontaneously ferment with its own wild microflora; nothing added, nothing removed. We bottled it as a pét nat to stay as true as possible to the wild fruit.
What's it like? Wildling is dry and highly sparkling. The aroma takes you out to the wild groves where the fruit was picked: all fall leaves, anise and sweet apples, forgotten by time.
Gentle tannins, with the softest herbal note from our native microflora - this is Revel at our best. A small sweet note comes through on the pallet, like if you turned apple skins to silk.
No added sulphites. 47 cases produced.

Production Terms:
Pét nat is short for Pétillant Naturel (French for naturally sparkling). It just means that we bottled it before fermentation was completed. Allowing fermentation to finish in bottle creates those tiny bubbles we love — those same small bubbles everyone loves in Champagne. Pét Nat is just a more natural way to do it.
