Schist is a crabapple cider, aged in amphora made in Italy from limestone clay.
We aged Schist on the pomace of 3 unique crabapples: Dolgo, Wickson and an unknown variety we foraged here in Guelph.
What's it like?: Dry and sparkling, Schist smells like French cidre, but that's where the similarities end. It tastes like crabapple flesh; funky/fresh with rounded acidity. Underlying notes of river rocks and fresh Ghee round it out.
