Resinto is our take on Retsina, the resinated wines of Greece.
It's Muscat Ottonel from 2020, aged in a single barrel lined with mixture of foraged spruce resin and beeswax from a local apiarist. We melted these down together, poured it into the barrel and rolled it around (Donkey Kong style) to coat the inside. The Muscat sat in it for a couple of months, before heading into bottle last spring.
What's it like? Aromatically, warm beeswax and floral Ottonel jump out first. The flavour is enriched with the wax, with a touch of Muscat florality and an easy spruce bitterness on the finish—just enough to prime you for your next sip.
Resinto is subtle in all the right ways.
