Porter's Perfection
Some apples are better than others.
Porter's Perfection is a traditional cider apple, discovered in the UK two centuries ago. It's classified as 'bittersharp' and the apples themselves are quite tannic. They also grow stuck together like little brioche buns!
They're freaky little guys (just the way we like them) - and here's why:
What's it like? Porter's Perfection's evolution in bottle has shocked us all. It's taken on a notable herbal quality, with aromas of lavender and hyssop when you first open it. This is nothing like what the apple tasted like fresh. We've never seen an apple do this before.
The acidity has mellowed significantly, and the tannins are present but subdued. We bottled Porter's Perfection as a pét nat* for natural carbonation (with zero added sulphites). Soft bubbles let the apples truly shine.
There are just 20 cases in existence.

*Pét nat just means that we bottled it before fermentation was completed. Allowing fermentation to finish in bottle creates those tiny bubbles we love — those small bubbles are a big reason everyone loves Champagne. Pét Nat is just a more natural way to do it.
