We made this piquette by macerating De Chaunac grape skins in mineral rich Guelph water for 3 days. 

What's it like? It's a salty, savoury treat - like sucking on an olive pit after a cheese and charcuterie board with a side of mulberries.  Big savoury and black cherry notes all around.

What is Piquette? (besides the drink of the summer)

Piquette is a vinous drink, made by adding water to grape pomace (the skins/seeds left over after pressing). Because these skins have a little sugar and acid leftover, it’s possible to make a small wine from them.

Historically, Piquette was made by farmers for consumption by those who couldn’t afford true wine (often themselves). Historically, it's low alcohol content made it a great refreshment after (or during) working hot days in the field.

In our minds, one of the most exciting aspects of piquette is the spirit of using every bit of your harvest in making it. Snout to tail winemaking, if you will.

The IRSSS provides essential services to Residential School Survivors, their families, and those dealing with Intergenerational traumas. Their mandate is multifaceted: To assist First Nation Peoples to recognize and be holistically empowered from the primary and generational effect of residential schools by supporting research, education, awareness, partnerships, and advocating for justice and healing. The Society assists Survivors with counselling, court support, information, referrals, workshops, and more.
