Perlant Picnic is a cider we made in collaboration with Meg and Drea from Two Faces, our favourite (and only!) natural wine bar in Guelph.
This is a cider made for sipping outside. Its tart (don't forget the cheese!) but weighty. Bring dessert.
A blend of blue plum cider (20%) and Perry (80%) made exclusively with Coldsnap pears, this is a very nice beverage to sip on. The perry portion had even more weight and natural sweetness than our usual Bartlett perry, but the high acid here balances it all out.
Plum skins and pits steal the show with their soft structural tannins, whistle tone acid, and sweet nuttiness. Perlant Picnic is complex, without taking itself too seriously.
Perlant is a French term for very low carbonation. This cider has almost sub-perceptual sparkles when you open it. More glittery than sparkly really.
It's funny, in North America we tend not to talk about the nuances of carbonation, but other cultures do recognize these subtleties. We feel that it's pretty special to dial in the perfect amount of bubbles so we're exploring this world in a way that feels right to us.
