Nimbus is a cider fermented and aged on Golden Plums for 7 months. We aged it in barrel on Gewürztraminer lees for another 2 months before bottling.
What's it like? Nimbus is taut acid, jolly ranchers and melted freezies. Undiscovered tropical fruits, somewhere between lemons and pineapples. Extended time on lees has given it a silky creaminess.
