Mesa is Sidra Natural, aged in Amphora made in Italy from limestone rich clay.
It's bottled still, not sparkling — and comes with a special cork to help you pour it from a height, the traditional way.
We aged Mesa on the skins of 3 different crabapples for months before leaving it in clay: Wickson, Dolgo and an unknown wild apple we foraged in Guelph.
What's it like?: Amphora ageing has added so much minerality to this cider. Mesa smells like wild apples, pressed between limestone rich rocks. It reminds me of the smell of the rocky beaches of Tobermory, wet with crystal clearest water.
