Ida is our first carbonic cider. It was tough to gauge when they were ready to press, so we gave them 19 days of carbonic maceration in a stainless steel vessel, and then pressed them.
Once fermentation with our native microflora was almost complete, we bottled it as a pét nat with zero added sulphites.
What's it like? It tastes like the experience of walking into our farmer's apple fridge during harvest, and getting hit with a wall of fresh apple aroma. There's perceptual sweetness here, although it feels like that's just from the carbonic process. It tastes like the best dang apple candy we've ever tried, and just bounces out of your glass. There are big cotton candy/juicy fruit vibes too.
