Coat Jersey is one of the coolest things we've ever made. It's:

• Single Varietal
• Pétillant Naturel
• Hand Disgorged

The Coat Jersey apple originated in the U.K. This fruit was harvested way back in 2018, wild fermented in stainless, bottled and left for a year to settle. In January of 2020, we put the bottles in the snow overnight, and hand disgorged them the next day (check out the pics!).

We then let it rest for another full year for the oxygen introduced while disgorging to integrate. It's finally ready.

What's it like?: It has that rubbery aroma so common in English farmhouse ciders. If that doesn't sound good to you, we'd recommend staying away.

It's the definition of funky fresh. Bright malic acid, spring barnyard funk, and beautifully integrated tannins. It brings a huge grin to our faces.
