Vermouth Soda - Whistling in the Dark
The base for these cans was Whistling in the Dark - a red vermouth we made with apples, cherries, blueberries and De Chaunac grapes. We built a garden behind the cidery and carefully picked a few exciting, seasonal botanicals to add to it.
After making the vermouth we barrel aged it for a few months, and blended it with house-made soda water before putting it into these beautiful cans.
It has the following botanicals: Anise Hyssop, Yarrow, Roman Wormwood, Common Wormwood.
What's it like?: The aroma here is blueberries, cherry leaves and anise with a touch of yarrow. The flavour is stewed berries with a slight sweetness from the fruit. A kiss of wormwood bitterness balances the soda, drying out your mouth in preparation for your next sip. We can't get enough of it.
Easy, no nonsense cocktails are exactly where our heads are at these days. Here's how we're drinking this soda:
Grab a glass and the largest ice cube you can find. Pour soda over it and garnish with a fat slice of orange. Easy as that!
