Solera is a 2 year blend of 100% wild, foraged apples. The fruit was picked in 2020, and 2021.
In 2020, we set aside a single barrel of foraged cider to age alongside our native yeast. One year later, we blended it with a still fermenting, young foraged cider from 2021 (as a pét nat). It's a unique, tangible representation of two full years of our lives.
The 2020 fruit was picked by our old friend and forager Nick Querques, from wild trees across southern Ontario. The 2021 vintage is from trees on the properties of a few heritage museums in Toronto.
It's undergone malolactic fermentation, reducing the acidity and adding a creaminess to the blend.
What's it like? When we ordered the labels, the oak sweetness and wild fruit reminded us of rum and orange juice, but it's evolved significantly in just a few weeks.
Now Solera tastes like funky dole pineapple rounds with a hint of apricot. It’s a little sour, like natty Tropicana.
Drinking it conjures memories, remembered or dreamed, of charcuterie and soft cheeses on a tranquil summer afternoon.
Solera is a complex and mysterious beverage that we can't get enough of.
