Russeting is a genetic characteristic of certain apples: a tendency of their skins to become tougher, thicker and darker. Russeting adds a nuttiness, which comes across as Macadamia nuts this year. It also makes the skin more permeable, releasing water weight and concentrating flavours.
The cider itself is easy and recognizable for those that enjoy classic French or English style ciders. It's simplicity is a refreshing diversion from some of our funkier offerings.
What's it like? A hot summer has reduced the acidity here, adding a richness so different from previous vintages. We expect this trend to continue, as climate change heats our region.
Golden Russet kind of tastes like dipping a Macadamia nut into the Werther's original caramel, before it's set. Gentle acidity, soft salinity and deep apple skin aromas intermingle with subtle wildflowers. The natural russeting process adds body and that familiar hint of russet nuttiness.
