Time and Place is the purest expression of the native yeasts in our cidery and on our fruit. It's bright and tart, a blend of apple and wild yeast acidity.
Long ageing on crabapple pomace coaxes out quiet tannins and ripe orchard aromatics. Restrained yet elegant, it is the cider we've always wanted to make.

Man that’s good. Tart and dry with a little funk. Just a hint of apple. Great cider.
Beau ptit funk fermier, à peine surette, très sec. Beaucoup de levure dans le fond de la can, ça change légèrement l'amertume quand on l'ajoute.
Nez délicat de tarte aux pommes maison. Goût acidulé et bien pétillant, léger fruité de pomme Macintosh, bien funky, subtil boisé, presque minéral, finale très sèche. Ce n'est pas exceptionnel, mais j'aime vraiment!
